Stepping Into NEW Food Era:

Today, I made my first purchase order for Ultratex 3 (Modified Tapioca Starch). Ultratex 3 i a high performance cold water swelling modified food starch derived from tapioca. It exhibits many of the properties of cooked starch and possesses a very bland flavor profile with good mouth melt away characteristics. 

It can be used to thicken liquids without the application of heat.

 

I am excited to bring this use of food into some of my recipes and cooking class. 

Will play with in the world of my BBQ sauces, have some REALLY crazy ideas for some fruit BBQ sauces and Glazes.

BASIC GRILLING CLASS@ SNF

Tomorrow I am doing a basic Grilling class at Smoke N Fire on 151st Street in Overland Park. There is still time to get in. The class is from 10 until noon. Want to learn more tips on heat control, heat zones, techniques and grillig tools. This the class for you. Aslo plenty of Q &A discussions and book signing after class.
