PAST WEEKEND WITH BBQ

Well, we got our "butts" kicked in Paola this year! First time no ribbons. BUT we had an awesome time. Once arriving, we did our normal setup and than got right to business by getting dinner ready for that night.

We made a Smoked Jambalaya with Shrimp, Italian Sausage, Chicken Andouille, Ham and Chicken. Smoked for about 1 1/2 hours on the smoker. Plus made some Red Beans braised with Smoked Loin back Ribs.

We feed some of the teams, BBQ Staff and police or security each year. Had a great time seeing old friends and talking wit the teams.

Congrats to everyone who got a call, and to the new up and coming teams out there.

We did all new BBQ and the it did okay, I thought it would do better, but I am not the one judging. We made

Brick Grilled Sicilian Style Chicken Thighs that were Smoke Infused. Sweet & Spicy Spares finished with Dr. Pepper BBQ Sauce. The sauce is AWESOME. (at least we thought- everyone around us loved the sauce! maybe they should have judged!) Than we did our Pulled Maple Sweet Pork (used to kick butt with this old recipe, but not anymore!) Brisket was GREAT but was to hot to slice, needed to cool down some more, juicy, great flavor, but need to rest a little.before I turned it in. that was my fault. All in All we had a a great time. And look forward to Mission in three weeks. Hopefully we will do better! If not we will have fun. Bruce's whole family fro out of town will be there and that is what we are looking forward to.

Paola Readiness

Spend the whole day getting ready for Paola BBQ Contest. This is our first contest in the last 3 months, We are excited about heading out to  our favorite contest. Looking forward to seeing old friends and making new friends.

 

Sauces and rubs are ma, meats are packed and Smokers are primed and ready to load.

Should be a GREAT weekend. Roots festival is always awesome.
