Paola BBQ Contest 8/28
This week, will be getting ready for Paola BBQ Contest: East Central State Championship. This is our (Bruce & I) favorite contest. It has been almost 3 months since doing our last one. Looking forward to seeing everyone and having some of my students come by.
Briskets have been aging for 35 days, Brisket Mop is made, Fresh BBQ sauces are done!! Need to get smoker ready and things packed.
It will be hot as always and to kick up the temperature a little more, I will be making my Famous Smoked Jambalaya and also Red Beans with Andouille.
Trying a NEW sausage at this contest and doing a new Sicilian Style Chicken. We will see.
